Turkish Flatbread (Pide) / 土耳其大饼


Ingredients / 材料:
  • 500 g German #550 flour
  • 1 package / 7 g Instant dry yeast
  • 7 g Salt
  • 320 g Water at 20C/68F
  • 1 tbsp Honey
  • 1 tbsp Olive oil
  • 1 tbsp Sesame seeds
  • 500克 德国#550粉
  • 1包/7克 即溶干酵母
  • 7克 食盐
  • 320克 水 20C/68F
  • 1大勺 蜂蜜
  • 1大勺 橄榄油
  • 1大勺 芝麻

Method / 做法:
  1. Whisk together the flour and dry yeast in the mixing bowl of a stand mixer attached with a dough hook. Add in salt, water, honey and olive oil. Mix first at slow speed, when the dough starts to come together, increase the speed to medium and knead until you have a soft, but smooth dough.
  2. Cover the dough with a plastic wrap and let sit in a warm place for about 45 minutes, or until doubled. Punch down and round into a ball. Divide in 8 smaller portions, cover with plastic wrap and let rest 10 to 15 minutes. The dough can be divided into 3 or 4 bigger ones as well, like we usually get from the supermarket.
  3. Flatten each dough into a 1cm thick round on a baking tray lined with parchment paper. Moisten the fladen with water and sprinkle some sesame on the pita. Again leave them, covered on the tray for about 30 minutes. Heat oven to 220C/450F and bake for 12-15 minutes.
  1. 面粉和酵母放入台式搅拌机的盆里,套上面团搅拌钩。接着加入食盐,蜂蜜和橄榄油。先用低速搅拌,材料都混合成团后,转中速搅拌至面团柔软匀滑状。
  2. 盖上保鲜膜室温醒45分钟左右直到面团膨胀双倍。排气揉圆后分成8小份,盖上保鲜膜松弛10-15分钟。你也可以将面团分成3或4块,烤好后的大饼和超市所售的一般大小了。
  3. 将每块面团按扁,大约是1厘米厚度的圆片状,放在铺上烤纸的烤盘上。表面刷上少许水后,洒上芝麻粒。盖好松弛30分钟左右。入预热220C/450F的烤箱内烘焙12至15分钟。
