Dampfnudeln / 德式馒头


Ingredients / 材料:
  • 500 g All purpose flour
  • 20 g Fresh yeast
  • 250 ml Lukewarm milk
  • 40 g Sugar
  • 2 pcs Small eggs
  • Pinch of salt
  • 50 g butter
  • Grated rind of 1 lemon
  • 1 tsp Salt (or sugar if preferred sweet)
  • 1 tsp Butter
  • ½ cup Water
  • 500克 中筋粉
  • 20克 鲜酵母
  • 250毫升 温牛奶
  • 40克 砂糖
  • 2个 小鸡蛋
  • 小撮食盐
  • 50克 牛油
  • 1个 柠檬皮屑
  • 1小勺 食盐(喜甜的话,就用砂糖)
  • 1小勺 牛油
  • 1/2杯 水

Method / 做法:
  1. Sift flour into a bowl and make a well in the middle. Crumble yeast into it and cream with some of the milk and a bit of the sugar. Cover bowl with a cloth and stand at a warm place for good 15 minutes.
  2. Knead risen yeast with flour, eggs, remaining sugar, milk, salt, butter and the grated lemon rind into a smooth dough. Rise for an hour. Press to release the gas and form dough into 10-12 equal rounds. Let rest for 10 minutes.
  3. Bring 1 teaspoon of butter, 1 teaspoon of salt and ½ cup of water to boil in a large, deep fry pan. Set the dumplings in the skillet, cover with the lid, and let cook for about 20 to 25 minutes at moderate heat. The Dampfnudeln are ready when all the liquid has absorbed and a golden brown crust has formed underneath. Do not open the lid until the dumplings are done. Serve with apple compote or vanilla sauce.

  1. 面粉放到搅拌盆里,中间落个凹井,将酵母弄碎放入,然后倒入少许牛奶和砂糖。用毛巾盖上,室温静置15分钟左右。
  2. 接着加入面粉,鸡蛋,剩下的砂糖,牛奶,盐,牛油和柠檬皮末搅拌揉搓成面团后,盖上进行发酵1小时。 面团排气后匀分成10-12份,松弛10分钟。
  3. 将1小勺牛油,1小勺食盐和1/2杯水放到深锅里煮开。排入面团后,盖上盖子,中火煮20-25分钟。当水份都被吸收到面团里,底部呈金黄色就可以了。烹煮过程中途不要打开盖子。可以和苹果泥或是拌以香草汁食用。
