Brötchen-German Rolls / 德国小餐包


Ingredients / 材料:
  • 454 g Bread flour
  • 1 tsp Salt
  • 14 g Fresh yeast
  • 310 ml Lukewarm milk
  • 15 g Butter
  • Sesame and poppy seeds to taste
  • 454克 高筋粉
  • 1小勺 食盐
  • 14克 鲜酵母
  • 310毫升 温牛奶
  • 15克 牛油
  • 芝麻和罂粟子

Method / 做法:
  1. Mix the flour and salt. Dissolve yeast in ½ cup milk and stir in some of the flour mix to make a fluid batter. Cover and let rise for about 20 minutes. Dissolve the butter in the milk. Add the rest of the flour and milk.
  2. Knead the dough until it comes away easily from the side of the bowl. Flour the bowl and let the dough rise for about 1 hour until the dough has doubled in size.
  3. Form the dough into about 12 round or oval rolls and set them on a greased baking sheet. Let rise for about 0 minutes. Preheat the oven to 200C/400F.
  4. Make a long slit in every roll with a knife. Brush with water and sprinkle with sesame or poppy seeds. Bake in a preheated oven for about 20-25 minutes.

  1. 把面粉和食盐混合。将酵母加入半杯牛奶里,加入少许混合后的面粉拌匀。盖住静置20分钟左右。加入牛油,剩下的面粉和牛奶。
  2. 用台式搅拌机将其拌至至匀滑有弹性,面团完全离开搅拌盆四周。取一个大盆,洒入少许面粉,将面团放入进行发酵大约1小时直到其膨胀为双倍大。
  3. 将面团分成12等份,揉成椭圆或是圆状,放到抹了油的烤纸上发酵大约10分钟。预热烤箱到200C/400F。
  4. 用刀子在面团中间划上一刀,刷上少许水洒上芝麻和罂粟子。入预热烤箱烘焙20-25分钟。
