Walnuts Whole Wheat Bread / 核桃全麦包


Ingredients / 材料:
  • 300 g Bread flour
  • 200 g Whole wheat flour
  • 12 g Fresh yeast
  • 8 g Salt
  • 40 g Walnut, chopped
  • 310 ml Water
  • 300克 高筋粉
  • 200克 全麦粉
  • 12克 鲜酵母
  • 8克 食盐
  • 40克 核桃碎仁
  • 310毫升 水

Method / 做法:
  1. Mix water, salt and yeast in a mixing bowl. Add in 2 kinds of flours. Knead until a dough formed.
  2. Transfer the dough to a working surface. Knead the dough until smooth and elastic. Cover with a plastic wrapper and let stand for about 40 minutes in a warm place until the dough doubled in size.
  3. Take out the dough, press out the gas and knead in the walnuts. Divide the dough into 2 portions. Knead each into oval, folding 1/3 of the dough from the top to the middle and 1/3 from the bottom to the middle. Seal the seam with the palm of your hand and shape it into a long loaf. Let stand for another 40 minutes in a baking tray.
  4. Preheat the oven to 200C/400F. Spritz the preheated oven with some water, then bake the bread for about 20 minutes.

  3. 取出面团,将核桃碎均匀揉入面团。将面团分成2份,揉成椭圆形,从上面将面团折叠1/3,再将另一面折叠成1/3,用手压合接口。将面团对折,然后揉成棒形。放到烤盘上进行最后40分钟的发酵。
  4. 预热烤箱到200C/400F。喷上水然后将发酵好的面团放入烘焙大约20分钟。
