Farmer-Style Sour Cream Bread / 酸奶油农夫包


Ingredients / 材料:
  • 200 g Sour cream, at room temperature
  • 3 tbsp Water
  • 330 g All-purpose flour
  • 1 package/7 g Dry yeast
  • 2 tbsp Sugar
  • 1+½ tsp Salt
  • ¼ tsp Baking soda
  • 1 tbsp Poppy or sesame seeds
  • 200克 酸奶油,室温
  • 3大勺 清水
  • 330克 中筋粉
  • 1包/7克 干酵母
  • 2大勺 砂糖
  • 1+1/2小勺 盐
  • 1/4小勺 小苏打
  • 1大勺 罂粟子或是芝麻粒

Method / 做法:
  1. Stir together sour cream and water in small saucepan. Heat over low heat until temperature reaches 48C/120F to 54C/130F. Do not boil.
  2. Combine flour, yeast, sugar, salt and baking soda in a large bowl. Spread sour cream mixture evenly over flour mixture and knead about 10 minutes to make a smooth and elastic dough.
  3. Grease a piece of large baking sheet. Shape dough into ball and place it on the prepared sheet. Flatten into 8-inch circle. Brush with oil. Sprinkle with poppy seeds. Invert large bowl over dough and let rise in warm place 1 hour or until doubled in bulk.
  4. Preheat oven to 175C/350F. Bake for about 25 minutes or until golden brown. Remove immediately from baking sheet and cool on wire rack.
